You can find fast drying compound that will dry to a hard surface in 30mins. I wouldn't recommend anything that dries faster as they tend to be hard to work with. Check lowes or hd.

The dry joint compound that you mix with water is actually plaster of paris. It starts to harden in 20 minutes. Don't ever mix more than you can use up in 15 minutes. The pre mixed joint compound is more of a gypsum product and msut dry to harden. In the summer the drying rate is very fast. In cooler or more humid seasons this takes longer. Pre-mixed joint compound will dry fast during the heating season due to the lower humidity if the heated air. Plaster of paris will not soften when wet like the premixed joint compound. Clean tools and containers right away.
