I am trying to figure out a way to hang/suspend the extended cab from our truck in the garage. Is there an easy way to do this? Don't need the cab on all the time and just want it out of the way so that it doesn't take up floor space.

before you go any further, go into the garage and look up at the rafters.
if you see metal plates where pieces of 2x4 or 2x6 come together, DO NOT try to hang anything useful from the ceiling beams. those are engineered trusses. they are designed to hold the roof and snow loads up, not support anything from below. you will need a qualified contractor to provide inspection, analysis, and a quote to uppgrade the roof beams to support more than some off-season holiday lights and your fluorescent fixtures.
if you have solid pieces of wood with no metal plates, you have a joist roof, old fashioned design. reinforce a couple of ceiling joists, and twin up the wall joists they sit on at the ends, and you should be able to hold several hundred pounds of pickup cab ok.
slinging an engine from the roof is yet another issue, you will need a contractor in for that.
