Does the backsplash follow the cabinets or the countertops?
Usually the countertops. If the top extends out past the end of the last wall cabinet, then use bullnose tile on the end and the top of the backsplash that extends past the cabinets.
That's assuming it's a tile backsplash. If a different material, then some other trim method in the same areas.
Agree the backsplash is usually the last thing after cabinets and counters.
Good time to make sure you have done any electrical changes prior to any tile or other surface applied. Under cabinet lighting, adding outlets and raising out any existing outlets/switches, so they are the right depth after the backsplash material is installed.
