I'm hoping for some advice on replacing my existing 1980s bathroom fan. The current cut-out is about a 13" circle. All of the fans that I see today are in the 7-9" cutout range. Is there any chance they still make a fan with a larger cutout (I haven't been able to find one yet), or am I looking at having to replace the section of drywall and make a new cutout?

You are looking at a small drywall patch. Not really a big deal - probably easiest to remove a large enough section of the ceiling to give access to installing the new fan as wall as taking the drywall back to a joist.
