I am replacing our tub and have seen where a mortar bed should be placed under it..How deep does it need to be and how much of the tub should be covered by it ?

It is there for support purposes, so have it cover as much of the bottom as possible -- without getting in the way of the drain assembly.

The idea is to put down the mortar, than set the tub in place and put weight on it to set it in the mortar to set it to the level you want the tub at. And that usually involves standing inside the tub while you move sideways and back and forth to help get in place. Mix the mortar not too thick, not too thin. You don't want it runny, but you don't want it so thick that it won't squish around to be able to set the tub.

Keep an open eye thru the access panel or where ever you can see, if it doesn't turn out right, pull the tub, remix the mortar or reset it and try again.

How deep does it need to be: there is no set rule of 2 inches or 5 inches. It is more determined by exactly what tub you're using and if it's an island, or an alcove, or a roman tub set up, and if you'll have tile around it, if the tile is already installed, or yet to be installed. Plan ahead.
