The guy who put the bathtub in my bathroom left a bigger gap between tub and plastic surround. He squeezed some caulk between it but it looks ugly and doesn't seal well. Do caulk strips work? Is there another alternative to cover a one inch gap?

No good way to fill a 1" gap. As you may expect, the right way is to reinstall the tub and surround. Odds are that your guy didn't level the tub in all directions, leading to the surround not lining up as it should. the thing is, for a multi-piece unit like you have the lower flange is only about 1" high. A 1" gap will not only look bad but will possibly leak.
If this was a guy that charged you to to this, then it's time to call him back and do things right.
