How can you remove tile back splash with out damaging the sheetrock?

You really can't. If you are going back with a different backsplash then you may be able to salvage the old drywall surface underneath with just some minor repairs. It really depends on how well the old tile was attached but usually it will tear off the surface of the drywall. Worst case will be having to remove the old drywall and replace. This can actually not be too difficult if you are going back with some other form of backsplash. You can even replace the old drywall with concrete board or plywood.
But, unless the existing tiles were not attached correctly, there is going to be some damage no matter how careful you are on removal.
