        a couple of friends asked me about how to make gravey
        1st you need a good heavey cast iron skillet
        a non stick,teflon coated will not do at all
        because you haVE TO STIR CONSTANTLY and the coating will come off in your gravey
        and ......because grand ma said so!!!!!
        get the skillet hot
        add to it. 1/4 cup butter, or bacon grease
        turn heat down to low. add 1/4 cup flour and stir stir stir constantly for 5 minutes, if it gets dry. add a little milk. keep stiring
        now you have your basic flour gravey. this is the time you can add stuff. add 1/2 lb of cooked sausage AND ABOUT 2 cups milk for some sausage gravey cook for 15 minutes stiring occasionally
        or add diced tomatoes instead of sausage

        a different gravey. after you roast your chicken
        use the drippings instead of bacon grease or butter
        and use chicken broth instead of milk

        or drippings from your roast and beef broth

        remember, 1/4 cup drippings, 1/4 cup flour, 2 cups liquid, add liquid little at a time, simmer, add, simmer. till you get it the thickness you like. i prefer thick gravey, not a thin du jour
