Maybe I should have been a little more clear on what I was looking for...I have done the usual frozen fruit juice, kool aid and that sort. I want to make some that are more interesting but that everyone will like. I tried some that were fruit juice with half and half added, to try to make them more sherbet like...didn't work as well as I would have liked, but maybe my combo was wrong? Who knows? I just thought so many people come here maybe someone out there would have some good ideas they use and try.
I will tell you one thing I did that worked good was to make instant pudding and put that into popsicle molds, it was pretty good. I just use molds they have at the dollar stores. Inexpensive way to cool off and not end up with flavors nobody likes.
So, anybody??? it's getting HOT and we want to stay cool!!!! Wink
Thanks

Hey I just found a bunch of fantastic popsicle recipes!! Have not tried any yet but I will be getting right on it, they all sound easy and yummy!! Also alot of the $1 stores have the molds, so ya don't have to spend alot to make something like these Smile

DRIPLESS POPSICLES
1 package fruit flavored Jell-o
1 package kool-aid
2/3 cup hot water
2 cups cold water
1 cup sugar

In a large pouring pitcher mix together: Jell-o, Kool-Aid, sugar and hot water, until dissolved. Then add cold water. Pour into molds and freeze. Will not drip! Makes 20 ice tups (Tupperware ice molds).

RC Note: In our "test kitchen," we used black cherry Jell-o and cherry Kool-aid. Recipe

fizzy fruit pops

1-12 oz. can fruit nectar (strawberry and peach work great!)
1-12 oz. can tropical Sprite
1 cup crushed or shaved ice

Mix well, pour into molds and freeze. The crushed ice seems to help the pop retain its' “sparkle.”

CREAMY JUICE BARS

1-6 oz. can frozen orange juice concentrate, softened (or grape juice, cranberry juice)
1-6 oz. can water
1 pint vanilla ice cream, softened, or plain yogurt
Whir in a blender. Pour into molds, insert sticks, and freeze.
Made seven, 2.5 oz. treats.

RC Note: In our test kitchen, we used orange juice concentrate and vanilla ice cream. The result is a refreshing "dreamsicle" flavor.

CREAMSICLES

1 (6 oz) can peaches in light syrup or
2 fresh ripe peaches, sliced and pitted
1 cup heavy cream
1 tsp sugar or honey (optional)
Popsicle sticks and cups

Whip cream in a blender for 30-45 seconds. Add peaches and honey. Whir until smooth. Pour into molds, insert sticks and freeze.

WATERMELON POPSICLES
1 cup seedless watermelon chunks
1 cup orange juice
1 cup water
Popsicle sticks and cups

Blend these ingredients into a blender, pour into molds, insert sticks, and freeze.

I hope you all enjoy these as much as we plan to...and you can probly use any flavor jello or juice you have in the cupboard or fridge Wink Experiment a little and create something totally different!

Hmmm....lots of mangos on hand, 1st year the tree has produced something to speak of and we actually were passing them on to friends. A mango popsicle does sound like it would be a winner - especially since our AC has chosen July in South Florida to bail out on us.

Here are a couple that I found online. The first is from Rick Bayless, the second from Whole Foods.

Popsicles

Makes 8 2-ounce popsicles

2 scant cups coarsely pureed peeled and pitted fruit (for really thick purees, like mango, you’ll probably want to use 1 1/2 cups of fruit and a 1/2 cup of water; with looser purees, I wouldn’t add any water)

1 to 4 tablespoons sugar–superfine sugar works best here (you can buy it or make it by running regular granulated sugar in your food processor for several minutes)

1/2 to 2 tablespoons fresh lime juice

In a medium-size bowl or in a 1-quart measuring cup with a pour spout, combine the fruit with the minimum quantities of sugar and lime. Taste and determine what your fruit needs. Remember: when the mixture is frozen, flavors will be slightly muted; go for slightly sweeter and slightly tarter than you’d normally like. Stir the mixture until the sugar has dissolved completely, then fill your molds, leaving about 1/4 inch of head space to allow for expansion. Set the lids in place and insert the sticks through the holes, leaving 1 1/2 to 2 inches exposed.

Peach Mango Popsicles

Makes 6 to 8
1 cup pureed mango (from peeled fruit)
1 cup pureed ripe peaches (from peeled fruit)
1/4 cup water
2 tablespoons sugar
Lime or lemon juice to taste
6-8 popsicle sticks
Combine fruit purees in a medium bowl. Heat water and sugar, stirring until sugar dissolves. Add to purees with lime or lemon juice to taste. If you have popsicle molds, fill them, leaving some room at the top to allow for expansion, set the lids in place and insert the sticks through the holes. If you don't have popsicle molds, fill small cups or empty yogurt tubs about 3/4 full, stretch plastic or foil across the top and make a small slit to insert sticks. Freeze until firmly set, 3 to 4 hours. To remove the pops, first remove the lids or wrap, then squeeze the sides of the molds, twisting them slightly, to dislodge the pop. If necessary, rinse the outside of the molds under hot water first.
